Lexington Select Board approves steakhouse license, suspends second restaurant over compliance failure

LEXINGTON — February 24, 2025 — Lexington Select Board unanimously approved a new all-alcohol restaurant license and suspended a repeat liquor violator at its February 24 meeting. The board granted PARC Restaurant Group Lex, doing business as Post 1917, a seven-days-a-week all-alcohol license for a 240-seat steakhouse at 27 Waltham Street, with owner Jason Caron as manager of record; the restaurant is targeting an opening before Patriots Day on April 19. In a separate hearing, Extapa restaurant — cited for a second alcohol compliance failure within three years after a December 17, 2024 incident — received a three-day license suspension with one day to be enforced before March 31 and two days held in abeyance. The board also approved the sale of $1,195,810 in four percent bond anticipation notes to Fidelity Capital Markets at a net interest cost of 2.85 percent, a one-year roll-forward to be bundled into a larger issuance in February 2026. The meeting marked the final session for Select Board member Susie Barry after ten years of service.
